It is a great feeling grilling tomahawk steaks, smoking pork butts, and preparing a pizza while listening to the best of Credence Clearwater revival blasting over your outdoor kitchen sound system! I have also consulted and helped design some great outdoor kitchens with all the grilling and thrilling amenities. From my hiking camp stove to building my off-set smoker, I have cooked on pretty much everything indoors and outdoors. ![]() I spend a large portion of my time now flying my plane to different parts of the United States, cooking, learning, and teaching, with a few trail hikes and camping treks along the way. I have worked in 4-star restaurants, diners, food trucks, and some of Texas's most fantastic BBQ joints. From diners to 4-star restaurants, I love cooking in every environment and learning new techniques. There is a picture of me over the left of me cooking on that same grill! LOL!Īfter graduating from Le Cordon Bleu culinary school, I set out to cook everything in every style. Hollowed out a 55 gal drum(it looked awful this franken-grill was held together mostly with wire), borrowed some wood for our local command center, and then it was dinner time. We had minimal food at times, so we had to get creative. ![]() I got my start in professional cooking while cooking for my team while on deployment. Since then, I have always had that passion for cooking and explored it wherever I went, even while serving in the military. ![]() My father was the one who taught me how to cook over an open fire when I was just a young lad Made sure I knew the two ingredients for authentic Texas-style BBQ Oak and fire. So happy to meet y'all! My name is Travis, and was raised on Central Texas BBQ.
